Marco Springmann received funding from Wellcome and the he Global Panel on Agriculture and Food Systems for Nutrition during the conduct of this study. University of Oxford provides funding as a member of The Conversation UK. Many people are choosing to make the switch to plant-based diets for many reasons — including as a way of cutting their climate footprint or to be healthier.

In fact, the recent research my colleagues and I published in Lancet Planetary Health found that eating a healthier and more sustainable diet such as vegan, vegetarian, pescatarian or flexitarian could actually slash up to a third off your food bill if you live in a high income country — like the UK, the US or Europe.

To conduct our study, we used data from the World Bank, which regularly collects information on the prices of many different items to estimate the purchasing power of different countries as a way of calculating their gross domestic product GDP.

For food items, they collected data on over products from markets around the world. These items ranged from global products — such as widely available rice brands — to regional products unique only to certain countries.

We used the price data on both global and regional items to calculate the average cost of different food groups — including rice, fruits and vegetables, legumes and fish — by country. To calculate the total cost of diets and cost changes, we then paired the price data with information on current food demand and waste from the Food and Agriculture Organization of the United Nations and with recommendations for dietary patterns that can be healthier and more sustainable than current diets — such as flexitarian, pescatarian, vegetarian and vegan.

This told us how much a person might spend on average to follow different diets. Ditto for unused pantry items take up space and represent money I've spent but am not getting any benefit from. Comparing prices and being open to shopping at different stores or finding bulk deals can lead to significant savings. Shopping online for private-label pantry staples can also be a way to save extra money.

As a bonus, buying canned or dried beans, legumes, and rice with a long shelf life will also mean less food waste. Meal prepping is an efficient way to save both time and money. Dedicate a day to prepare meals for the week and prioritize high-protein options like tofu scramble to keep you full and satisfied.

This approach minimizes the temptation of impromptu takeouts or expensive convenience foods. Writing out your weekly meals provides a helpful diet overview and will make it easier to meet your nutritional needs.

As long as they are appropriately planned, vegan diets can be healthful, nutritionally adequate, and may even help prevent certain diseases, according to the Academy of Nutrition and Dietetics.

Batch cooking and freezing portions ensure you always have quick, healthy meals on hand. Meal prepping also allows you to buy ingredients in bulk, which is often more cost-effective. By planning your meals, you can ensure a varied and balanced diet, reducing food wastage and making the most of every grocery purchase.
